OK, so I have to admit pizza is probably the biggest thing I miss being on a Keto diet. We have made chaffles and put sauce cheese and toppings on them. They were good, but not quite pizza. So I decided with the countless recipes for breads and crusts, I would make one and use it for pizza.
I have tried some of the various low carb/keto recipes for pizza or pizza crust. So far none have been a total hit for me.
As of this morning I am down a total of 24 lbs. I would like to lose it faster, but that takes a lot more strict discipline. I am happy with my continued progress.
Now for the recipe:
Keto/Low Carb Pizza Crust
This is my version of a keto/low carb crust. This can be used for pizza, bread sticks, etc.
Ingredients
Method
- Preheat the oven to 425 degrees Fahrenheit
- Line a sheet pan with parchment paper
- Place the Mozzarella and Cream Cheese in a microwave safe bowl.
- Microwave the 2 cheeses for about 45 seconds on high or until melted.
- Remove from the microwave and mix in Egg, Almond flour, garlic powder, baking powder, Italian seasoning.
- Once thoroughly mixed, put the mixture on the parchment lined sheet pan.
- Place a second piece of parchment over top of the mixture and spread it evenly to about 1/4 inch thick. (Thicker or thinner based on your preference).
- Remove the second piece of parchment and put it in the oven for about 10 minutes or until it starts to brown. You can leave it in as long as you like depending on how dark you want it.
- Remove from the oven and allow to cool or add sauce and toppings and return it to the oven for 5-10 minutes until it is cooked to your liking.
- Possibilities: Pizza, Garlic Bread, Cheesy Bread sticks, Bread sticks, cook until crispy and make crackers
